Peanut Butter and Jelly Bars


2 cups creamy peanut butter (or chunky)
1 stick unsalted butter, softened
½ cup organic cane sugar
½ cup brown sugar, packed
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
¾ teaspoon baking powder
¼ teaspoon kosher salt
1 jar Darbo Strawberry Fruit Spread


Preheat oven to 375°F and line your dish with parchment paper, we love If You Care
In a stand mixer, mix peanut butter, butter, granulated sugar, and brown sugar on low-medium speed.
Beat in the egg and vanilla.
In a separate bowl, whisk together the flour, baking powder, and salt; add to the peanut butter mixture.
Spread a little more than half of the peanut butter mixture onto the bottom of your baking dish.
Spread the Darbo Strawberry Fruit Spread evenly over the bottom layer of peanut butter.
Drop the remaining dough evenly over the top of the preserves.
Bake for 40 minutes or until the edges are golden brown.
Let cool completely before enjoying.
