Sunrise Granola

Ingredients

½ cup coconut oil
½ cup Darbo apricot fruit spread
½ tsp salt
½ tsp ground turmeric
¼ tsp ground cinnamon
2 cups rolled oats
¾ cup coconut chips
½ cup raw sliced almonds
¼ cup raw pumpkin seeds
¼ cup raw sunflower seeds
2 tbsp golden flax seeds
½ cup dried pineapple, chopped (optional)
¼ cup candied ginger, chopped (optional)

Method

Preheat the oven to 325°F and line a baking sheet with parchment paper. In a small saucepan, combine the coconut oil, apricot fruit spread, salt, turmeric, and cinnamon. Whisk until warmed.

In a large bowl, mix the oats, coconut chips, almonds, pumpkin seeds, sunflower seeds, and flax seeds. Pour in the liquid and stir to coat. Spread the mixture onto the baking sheet in an even layer. Bake for 20 minutes and stir to redistribute. Turn the oven off and leave the baking sheet in for an additional 7-10 minutes or until the granola is golden brown. Remove from the oven and let cool completely.

Once the granola has cooled, stir in the dried pineapple and candied ginger if desired.
